Literally, single sound.

Simple wind Instruments (examples: Flute, Bagpipes with single chanter, Penny Whistle) are Monophonic.

Stringed Instruments (examples: Guitar, Mandolin, Piano, Dulcimer even Fiddle) Keyboards and some Reed Instruments (examples: Concertina, Melodeon, Accordian, Harmonica )  have the ability to play more than one note at a time (Polyphony) and therefore can play Chords while monophonic instruments can only play Melody (or single Harmony) unless played in consort.
